Using sorting markers

For multiple item types, put one matching [Filter] item of each type in the same destination chest. One item per type is enough; an entire renamed stack is protected.

Put markers in destination chests, not in the copper chest used for collection. Copper golems can still take items from copper chests.

You can move markers by hand or rename them again. Protection only affects hoppers and hopper minecarts, including when they pick up dropped items.

All other names keep the normal hopper behaviour.
